Ingredients

  • 2 pounds small red potatoes, scrubbed and sliced into ¼-inch thick rounds
  • 1 tablespoon fine sea salt
  • ¼ cup Butlers Pantry Dill Olive Oil
  • ⅓ cup fresh flat-leaf parsley, roughly chopped (plus extra for garnish)
  • ¼ cup fresh dill, finely chopped
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons capers (optional, for a briny kick)
  • Freshly ground black pepper, to taste

Instructions

  1. Boil the Potatoes: Place sliced potatoes in a large pot and cover with cold water. Add the sea salt and bring to a boil. Reduce heat and simmer until potatoes are fork-tender (about 5 minutes). Drain and let cool slightly.
